Fruit and Yogurt Granola Cups
Delicious and healthy breakfast cups! Easy to make and fun to eat, the kids will love these treats!
Ingredients
- 1 banana (mashed)
- ½ cup applesauce
- ½ cup honey
- 1 tsp vanilla extract
- 1 tsp almond extract
- 3 cups rolled oats
- 2 tsp cinnamon
- ¼ tsp salt
- 16 oz Your favorite yogurt (to fill the cups after they bake and cool)
Dressing for Fresh Fruit
- ¼ cup honey
- 1 lime + zest
Fresh Fruit
- 1 pint blueberries
- 1 pint strawberries (diced)
- 2 cups watermelon (diced)
- 2 cups grapes
- your favorite fresh fruits
Instructions
- In a large bowl, mash the bananas well and stir in the applesauce to combine. Add the honey, vanilla and almond extract and mix well.
- In a separate small bowl, whisk the oats, cinnamon and salt. Once mixed well, combine with the other ingredients in the large bowl.
- Grease muffin tin with either butter or cooking spray.
- Use a medium ice cream scoop to evenly divide mixture into each muffin cup. (approx. 3 heaping tbsp.) Evenly press mixture around sides and bottom of each muffin cup. Cover with plastic wrap and chill for 1 hour.
- Preheat oven 350°F and bake for 30 minutes. Let cool in pan for 20 minutes.
Dressing for Fresh Fruit
- In a small bowl, whisk together the honey, lime juice and zest of 1 lime.
- In a large bowl, combine all your favorite fresh fruits. Pour the dressing over the fruit and mix well.
To assemble:
- Fill the cooled cups with your favorite yogurt and top with the fresh fruit.
Notes
Additional topping ideas: mini chocolate chips, mini marshmallows, or mixed nuts.
